About Keith

Over the course of his storied career, award-winning baker Keith Giusto has been instrumental in shaping the landscape of professional baking.

It all began while growing up, working in his grandfather’s bakery & health food store in San Francisco. From a young age, Keith helped bake every item the shop offered, but sourdough held a special appeal for him. In his free time, he developed a starter with wine grapes, flour and water (the same one he uses to this day), and formulated recipes he would bake to share with family & friends.

Early in his professional career, Keith worked with farmers to select varieties of grains that could be grown sustainably for their region and would produce flour that met the performance needs of professional bakers. In 1996, Keith became a partner in a fledgling company called Central Milling – named after the historic flour mill they purchased together. There, he worked with some of the best bakers around the country, crafting blends to meet their needs, sharing with them his knowledge of farming & milling and learning from their decades of experience.

Keith’s sourdough breads became available to the general public for the first time when he opened his own bakery – Full Circle Bakery in Penngrove, CA. His breads were extremely well-received, garnering a variety of honors and accolades including the prestigious James Beard Award for best sourdough. Eventually, Keith would have to step away from the bakery as his priorities shifted to launching a flagship brand of organic flour for Central Milling and opening Keith Giusto Bakery Supply in Petaluma, CA. But his passion for baking artisan sourdough bread and sharing with others never ceased.

With the launch of Keith Giusto Bread Club, Keith is once again able to highlight the best of the farmer, miller and baker through the bread he bakes – now, for the first time, with customers around the country.
